Our Favorite NYE Cocktail: Blackberry & Thyme Gin Sparkling Wine Cocktail
We're firm believers that you can't have a New Year's Eve celebration without sparkling wine! We're here to share our favorite sparkling wine cocktail with a twist, featuring a splash (or two!) of gin, homemade blackberry simple syrup, lots of bubbly and fresh thyme and blackberries for a festive garnish.
I N G R E D I E N T S :
(Serves 4)

1 c. blackberries + 8 more for garnish

1 c. water

1 c. sugar

1 bottle of sparkling wine (We've loving Chandon's festive holiday bottle!)

4 ounces or 1/2 c. gin

4 long sprigs of thyme

1 c. ice

champagne flutes
I N S T R U C T I O N S :
In a small saucepan, bring blackberries, water, and sugar to a boil. Reduce heat and simmer for 10 minutes, until the blackberries are soft and the simple syrup is now bright pink / red in color. Remove from heat, drain blackberries, and allow to cool. (Pro party tip!: This step can be done well in advance as the syrup will keep for at least a week in the refrigerator).
Next, begin by adding 1 ounce of gin to each champagne glass. Then drop a few blackberries into each glass, followed by 2 ounces of homemade blackberry simple syrup.
Fill the rest of the glass with sparkling wine and top with a sprig of thyme in each glass. Cheers!
